Spiced Caramel Apple Cupcakes

These are Autumn in a cake. I picked the apples from the tree in my garden and even though the recipe I adapted was strictly toffee apple flavoured, I couldn’t help but add some cinnamon into the mixture. Even though all the other ingredients were shop bought, it felt nice to use fruit from home and make use of something that might otherwise go to waste.


These were really simple but fun to make and perfect now the weather is getting little colder. Stewing the apples first makes these so soft and warming and not at all lumpy or soggy which sometimes puts me off using pieces of fruit in cake – think apple crumble consistency. I will definitely be making these again the next time I have a weekend off and want to spend it in the kitchen.

100g softened butter
150g self raising flour
150g light brown sugar
2 large eggs
1 teaspoon cinnamon

For the apples
2 cooking apples
1 tablespoon water
3 tablespoons caster sugar
1 teaspoon vanilla extract

For the icing
25g softened butter
60g full fat cream cheese
50g sifted icing sugar
1/2 tablespoon caramel sauce

1) Peel, core and chop the apples and put into a small saucepan along with the water, sugar and vanilla extract. Stew over a medium heat for around 10 minutes, or until the apple is soft.

2) Preheat the oven to 160 Fan and line a 12 hole muffin tray. Mix all the ingredients, besides the apple, together in a bowl until well combined. Then add in the apple mixture and stir in using a wooden spoon until evenly distributed.

3) Transfer the mixture evenly between the cupcakes cases and pop in the oven for 20-25 minutes.

4) Leave the cakes to cool and make up the icing. Once the cakes have cooled, decorate however you like – I spooned the mixture onto the cakes then swirled in a little extra caramel sauce on top.


These were probably some of my favourite cupcakes I’ve made however next time I would try making up a standard buttercream and adding caramel to that. Store these in the fridge if you do use cream cheese and they will keep for up to 48 hours.
