Coffee & Walnut Traybake

I absolutely love sitting down with a bit of cake and a coffee, especially when I’m catching up with friends. I tried to have these two items next to my laptop as often as possible when I was studying. I feel like this particular flavour is either a love it or hate it, but it was requested by my my dad’s office so here is my first cake of 2018…

This is another one of my trusty Mary Berry all in one recipes. I do find it comes out quite flat despite the baking powder, but once it has the icing on it’s fine, so don’t worry if your’s comes out like this too. I don’t have coffee extract so as Mary Berry says to do, I mix two teaspoons of instant coffee with one tablespoon of boiling water and it always tastes fine. It certainly went down well in the office…

Ingredients
100g softened butter
100g self raising flour
100g caster sugar
1 tablespoon baking powder
2 large eggs
50g chopped walnuts
half the coffee mixture

For the icing:
100g softened butter
225g icing sugar
2 tablespoons milk
the rest of the coffee mixture
a few walnuts decorate

Method:
1) Preheat the oven to 160o/c and line a small brownie tin with baking paper

2) Measure all the ingredients and combine into a large bowl, mixing until you have an even consistency and the mixture is pale in colour

3) Pour the mixture into the prepared tin and even with a spatula, then pop in the oven for 20-25 minutes, until the cake has risen or a skewer comes out clean

4) Leave the cake to cool on a wire rack and in the meantime make the icing by combining the butter and icing sugar, adding in the coffee and milk as the icing comes together.

5) Decorate as you wish!
